Switch oven to 120oF/50oC (or the lowest setting).
Put fresh pomegranate seeds on the baking tray and place the tray on the center rack.
Let the seeds drying out in the oven for about 5 to 8 hours, turning them every hour. The dried pomegranate seeds are ready when it feels like leather when touching.
Before grinding the seeds into powder, let them cool down thoroughly for 12 hours.
